I make a version of this @chrisbeatcancer salad and alter it with what I have on hand. Chris Wark created this salad when he was battling cancer to help his immune system. It's such a great salad. This salad contains vitamins, minerals, antioxidants, protein, and enzymes.
Always use organic produce if possible / no meat or cheese
This salad tends to get huge cause there are so many ingredients. I always make it in a big bowl. It keeps for a couple of days, too..this is enough for at least a couple of big salads.
Two handfuls of leafy greens. A mix of your choice of kale, spinach, swiss chard, arugula, or parsley.
one handful broccoli
one handful cauliflower
one pepper in any color or a little of each if you have multiple
shredded purple cabbage
1 - 2 slices of onion, any kind. I like red.
mushrooms
½ avocado
1-3 tbsp sunflower seeds
1-3 tbsp hemp seeds
½ cup of beans sprouted or cooked
Extra add-ins if you want or have on hand:
Leeks / shaved brussel sprouts/carrots/radish
Whatever fresh herbs you have, dill/basil/ you can even add mint.
Broccoli sprouts - they are super excellent and anticancer as well.
Fermented food like sauerkraut or kimchi makes a good topping.
Hummus is also good on top.
Dressing
1 tbsp organic extra virgin olive oil ( you can add flax, too, if you have seeds or oil)
Drizzle organic apple cider vinegar.
Sprinkle on some spices: organic oregano / organic garlic powder / organic turmeric or curry / organic parsley / organic Cayenne ( just a little) / I add a little nutritional yeast, too.
